Irish Soda Bread

In honor of my recent trip to Ireland, I’m posting a recipe for Irish Soda Bread! It’s easy to fix, and I make it on a regular basis to go with stew:

3 cups flour

1/2 cup rolled oats

1 T sugar

2 tsp baking soda

1 tsp salt

1 cup buttermilk (or 1 cup milk plus 1 tsp vinegar)

1/2 cup apple sauce

2 T melted butter

1/2 cup raisins

2 T milk

Preheat oven to 375 degrees. Spray 8 inch baking pan with cooking spray. Mix dry ingredients in large bowl. Mix buttermilk, apple sauce, and butter in another bowl. Add this to dry ingredients and stir until it forms a ball. Turn out onto floured surface and knead raisins into dough. Place in baking pan.

Cut a cross in top, brush with milk, and sprinkle with oats.

Bake 35 minutes. Cool for ten minutes before inverting on wire rack and turn right side up.
