I haven’t posted anything purple recently, which is not for lack of trying. I couldn’t find any sort of purple vehicle for the weekend entry. But I was at the grocery store and found these beautiful purple potatoes!
Why not feature a quick supper with purple fingerling potatoes?
ROASTED POTATOES AND SAUSAGE
1 purple potato
1 white potato
1 sweet potato
1/4 onion sliced
1/2 pound turkey sausage
1 T olive oil
1 tsp cumin
1/2 tsp crushed red pepper
salt and pepper to taste
Heat oven to 400˚. Peel and then slice potatoes into chunks. Rinse and pat dry. Toss potatoes and onion with olive oil to coat and sprinkle with cumin, red pepper, salt, and pepper. Spread single layer in foil lined pan and bake for 25 minutes.
Slice sausage into 1-inch pieces and add to pan. Bake ten more minutes or until hot.
I served mine with a side of garlic naan.
