I like quick, delicious stir-fried meals, so when I found boneless pork chops on sale I knew what was for dinner! The sesame oil adds a lot of flavor in a small amount.
Pork Stir Fry
1 lb. cubed pork in 2 tsp. corn starch (keeps the pork from sticking together and slightly thickens the sauce)
1 medium onion, minced
1 stalk sliced celery
2 cloves garlic, minced
2 slivers fresh ginger
6 cups bite-sized vegetables such as broccoli, carrots (julienned), red/green/yellow/orange peppers
1 tbs. sesame oil
soy sauce and black pepper to taste
1/2 cup almonds
Heat fry pan to medium, add oil and sautée pork with a few sprinkles of soy sauce until no longer pink in center. Remove to plate. Sautée garlic, onion, celery, and ginger being careful not to burn the ginger. Add other vegetables and cook until broccoli brightens. Add pork and almonds to pan. Cover and steam on low for about three minutes.
Serve with rice.
Of course, this can be made with chicken, shrimp or scallops and your choice of other delicious vegetables such as shredded cabbage, cauliflower, water chestnuts and even pineapple.
